Wood Duck Farm

Hey do you have a few cucumbers sitting in your refrigerator. Don't know what to do with that okra? Thanksgiving is coming up and chances are you might be entertaining some friends and/or family. Consider pickling some of these items. Not wanting to get the pots out? That's okay, just take some store bought pickle juice, (yes from that near empty jar of pickles in your frig.) and use that instead of making your own.

Below is a simple "Refrigerator Pickle recipe." Wish to spice things up? Consider adding some fresh peeled garlic cloves and possibly a sliced jalapeno pepper or two.

  • 1 cup distilled white vinegar
  • 1 tablespoon salt
  • 2 cups white sugar
  • 6 cups sliced cucumbers
  • 1 cup sliced onions
  • 1 cup sliced green bell peppers

Directions

  1. In a medium saucepan over medium heat, bring vinegar, salt and sugar to a boil. Boil until the sugar has dissolved, about 10 minutes.
  2. Place the cucumbers, onions and green bell peppers in a large bowl. Pour the vinegar mixture over the vegetables. Transfer to sterile containers and store in the refrigerator.

Once prepared, now you'll be able to pull out and serve with some local cheese, smoked meats and have a "story to tell to boot!"
